Been searching the site and I have not been able to find what time zone server time is based off of? anyone know?

The timezone of the server is UTC, which is often also called GMT as said above.
It's equal to British time in winter (and Portugal, Iceland and parts of West Africa). It doesn't change with daylight savings time anywhere, so it's not equal to British time in summer.
